Is Our Food Less Nutritious Than It Used to Be? The Soil Depletion Data

Here's a claim you may have heard and quietly doubted: our food isn't as nutritious as it used to be. It sounds like the kind of thing people say about the good old days. Except in this case, there's data behind it.

The landmark study

In 2004, a research team led by Donald Davis at the University of Texas compared nutrient data for 43 garden crops between 1950 and 1999. Using USDA figures across that half-century, they found measurable declines in several nutrients, including minerals like calcium, phosphorus, and iron, along with protein and some vitamins.

The declines weren't uniform or catastrophic, but the direction was consistent enough to take seriously. Later analyses of historical crop data have pointed the same way: the produce on our plates tends to carry fewer minerals than the equivalent produce did decades ago.

Why would food lose nutrients?

A few explanations, and they compound.

The dilution effect

The most supported explanation. Modern agriculture has bred crops for yield, size, and shelf life. Bigger, faster-growing plants can end up with more carbohydrate and water and a lower concentration of minerals. You get more food by weight, but it's a bit more diluted nutritionally. Researchers call it the dilution effect.

Soil that gives less

Intensive farming can draw minerals out of soil faster than they're replenished. Standard fertilizers restore the big three, nitrogen, phosphorus, potassium, that drive growth, but not necessarily the full spectrum of trace minerals like zinc, magnesium, and selenium. A plant can only pass on what it pulls from the ground.

How we handle food after harvest

Long transport, storage, and time from field to plate can further reduce what actually reaches you.

What it means for you

Not panic. This isn't a reason to distrust vegetables; whole foods remain the foundation of a good diet, and you should absolutely eat them.

But it reframes a common assumption. "I eat a balanced diet, so I'm getting everything I need" was more reliable when the food itself was more mineral-dense. Today, eating well and still coming up a little short on minerals isn't a contradiction. It's a realistic outcome, especially once you add the modern factors that drain minerals faster: stress, coffee, alcohol, and sweat all raise how much your body loses.

The case for a mineral foundation

This is a big part of why we built Current. Eat your vegetables. Keep eating them. Just know that "balanced diet" carries a little less mineral weight than it used to, and that filling the gap is a sensible response to a real change, not a marketing invention.
